Mexican Cups Appetizer Recipe

Serve these delicious, spicy Mexican cups as a festive appetizer. They are made with chicken sausage, which has fewer calories and lower fat than pork sausage but is still full of flavor.

Ingredients

    • 2 chicken sausages*, precooked (3 oz per sausage)
    • 1/2 cup taco sauce
    • 1 Tbsp chili powder
    • 20 slices canned jalapenos
    • 1/4 cup egg whites
    • 1 cup reduced fat Mexican cheese blend
    • 18 wonton wrappers

Preparation

    • Preheat oven to 350 degrees.
    • Cut chicken sausages in half lengthwise and then into 1/8 inch thick slices. In a medium sized bowl, add sausages, taco sauce, chili powder, jalapenos, egg whites and cheese together. Mix thoroughly.
    • Spray muffin pans with cooking spray, and place one wonton wrapper into each muffin cup. Spoon sausage and cheese mixture into each wrapper.
    • Bake for approximately 20 minutes until cheese is melted and wonton wrappers become crispy. Serve hot.
    • *Chicken sausage nutritional information varies by brand. This recipe is base on two 3 oz. chicken sausages.
