Smoked Salmon and Asparagus Appetizer Recipe

This easy appetizer recipe looks impressive but only takes minutes to prepare. Tender asparagus and smoked salmon are a perfect match. Serve a larger portion for a light lunch.

Ingredients

    • 12 asparagus spears, trimmed
    • 4 oz smoked salmon, thinly sliced
    • Lettuce leaves, parsley, cherry tomatoes (garnish)
  • Mustard Sauce

    • 1/4 cup plain, nonfat yogurt
    • 1/4 cup reduced-fat mayonnaise
    • 2 tsp honey mustard (or 2 tsp hot of Dijon mustard plus 1/2 tsp sugar)
    • 1 green onion, sliced thinly
    • freshly ground black pepper to taste

Preparation

    • In a steamer or a colander set over boiling water, steam the asparagus until just tender, about 3 to 5 minutes. Remove from heat and set aside to cool.
    • In a bowl, combine all mustard sauce ingredients.
    • Wrap three spears of asparagus in one ounce of salmon. Repeat.
    • Arrange on asparagus on lettuce-lined plate and garnish with cherry tomatoes and parsley. Serve with mustard sauce on the side.
