Shrimp Scampi Appetizer Recipe

This delicious, high-protein shrimp appetizer will dress up your holiday table. You can marinate the shrimp the night before and finish up the recipe in 30 minutes.

Ingredients

    • 5 Tbsp light mayonnaise
    • 1/2 tsp black pepper
    • 5 Tbsp lemon juice
    • 4 garlic cloves, minced
    • 2 lb uncooked large shrimp, shelled and deveined
    • 1 cup whole grain bread crumbs
    • 1 tsp crushed dried basil
    • 1 tsp dried dill
    • 2 Tbsp melted reduced-calorie trans fat free margarine

Preparation

    • In a medium bowl, combine mayonnaise, pepper, lemon juice and garlic; stir until well blended. Place shrimp in a large resealable plastic bag. Pour mayonnaise marinade over shrimp and close bag. Marinate in refrigerator 4 hours or overnight. Remove from refrigerator and drain, reserving half the marinade in a bowl.
    • Preheat oven to 400°.
    • Place a large wire rack on a large shallow baking pan. In a small bowl, combine bread crumbs, basil and dill. Coat each shrimp with bread crumb mixture and place in a single layer on wire rack.
    • To the reserved marinade, add melted margarine and pour mixture over shrimp. Bake for 20 minutes, or until opaque. Serve immediately.
